If you came by the Studio this afternoon for our Spa Party, you probably tried on of our yummy vegan coconut cupcakes! We thought we'd share the recipe ...

Recipe for LilyCakes

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup canola oil

1 cup light coconut milk

2/3 cup sugar

1 teaspoon vanilla extract

1 cup unsweetened shredded coconut

FROSTING:

1/4 cup soy margarine (Earth Balance)

1/4 cup light coconut milk

1 teaspoon vanilla extract

2 cups confectioners’ sugar

1 cup unsweetened shredded coconut

Preheat over to 350°F. Mix flour, baking powder, baking soda and salt. In a separate bowl combine oil, coconut milk, sugar and vanilla. Pour dry ingredients into wet and mix until smooth. Fold in coconut. Fill lightly oiled muffin tins 2/3 full of mixture. Bake for 20–22 minutes or until slightly browned and spring back when touched. Cool on wire rack.

To make the frosting, cream margarine until light and fluffy. Add coconut milk and vanilla and combine. Add confectioners’ sugar and mix until smooth. Add coconut and combine. Refrigerate until ready to use. Frost cakes when they have cooled fully. Enjoy!

"What is LilyPix?" Party a Huge Hit!

Thank you to everyone who came out on Sunday for our "What is LilyPix?" Party! We had a great time introducing LilyPix to our families and friends. We especially want to thank Marci from BeautiControl for letting us test our her Spa products ... we loved them so much that we've scheduled a Spa Party for Sunday, March 28th (all are welcome!!!). We would also like to thank Becky Sanders for bringing us samples of her amazing themed cakes and cupcakes ... Becky can create sweets for any occasion ... a great addition to your portrait party! We have many more fun events planned throughout the year ... next up is our Celebrate Spring/Easter Event ... details coming soon!

Looking for a fun, inexpensive way to promote your business? Join us for the LilyPix Vendor Fair!

When: Saturday, April 17, 2010 from 11:00-4:00

Where: LilyPix Studio at 321 Ellis Street, New Britain (right off Route 9)

Cost: Your $35.00 vendor fee will get you a covered display table and chair and we'll also provide promotion, refreshments for guests and gift bags. We also ask that you provide a sample or coupon/gift certificate for us to include in the gift bags.

If you would like to have your information in our gift bag, but aren't interested in having a display table, just provide the info and we'll add it to the bag for a $15.00 fee!!!

You're invited to the launch party for LilyPix Home Portrait Parties!

The LilyPix concept is simple really ...Choose one of our themes including Kids, Pets, Ladies' Night, Holiday Cards ... then invite your friends over for an evening or afternoon of photo fun! We'll do a short portrait session, then show everyone their proofs. They'll have the option of ordering from our unique selection of prints and custom-designed products! As a bonus to the host, she will earn credits toward her own portraits!

For our launch, the theme will be Families & Kids. We'll do 15 minute sessions of each family or child. We suggest solid, neutral colored clothing (black, navy, denim, white, khaki). Any guest that books her own LilyPix party will receive a special gift.

Refreshments will be served.

A Great Start (Sort Of!)

When Lucy's Aunt heard about LilyPix, she asked if we would come down and do a portrait of her 6 grandkids. It was last minute and Yolanda (our photographer) was off on another shoot ... so Lucy (our retoucher/graphic artist) gave it her best effort. The kids were great sports for about 8 minutes ... but the newly opened Christmas gifts quickly won out!
